 QUESTION FROM A READER:
I’m running in circles looking at colors and would love a second opinion/set of eyes.  All colors to be Sherwin Williams. The house faces the beach and has great views of the gulf, so I don’t want to take away from that with a bunch of “color”.  The thinking here is soft, neutral, subtle.  
TRIM: The foyer door and side lites will be Tricorn Black.  The windows and French door in the living room/dining room will be Tricorn Black (these few are wood/alum clad windows, black on the exterior also)   All other windows are white vinyl.  Floors are a medium brown walnut wood with dark distressing, knots.  Base boards, built-ins, moldings, window & door casings will be Snowbound (this is the white that best matches the kitchen cabinet color)  There will be 1x8 horizontal ship lap in the kitchen/breakfast and on the fireplace.  Not sure whether to keep this the same as the trim color (Snowbound) or to darken a bit to contrast against the cabinetry.   Main Walls: Thinking of White Herron .
QUESTION 1: What color for the shiplap walls in the kitchen, against the White cabinets?
QUESTION 2: Ceiling color - would like to use a VERY pale blue/white.  Possibly Rhinestone  Same color on ALL CEILINGS?

First of all, pardon me while I drool. I checked out the photos you posted on facebook and your home is amazing!  What a great location.  You have a large job ahead of you! 

Staying in the neutral, soft and subtle range is pretty easy with Sherwin Williams' range of soft grayed down neutral tones. Soft white with the tricorn black trim will be lovely with these colors.  It would also compliment the walnut colored floors.   I also love that you chose Tricorn black for window and doors in the living dining rooms to frame that view.  Just that touch of deeper color will ground your whole color scheme and add some needed contrast - and a little drama to your rooms. 

I recommend the shiplap be painted the same color as all the other wood and trim, especially if there are any additional plain walls where color would be applied. If you do have some walls where paint would be
applied, here are a few to consider:

As for the ceiling color, Rhinestone is perfectly lovely and using it on all the rooms will create flow.  Look also at Sea Salt. (Close to the first photo in this post).  Although it is a little darker, it is a wonderful color for a ceiling and very coastal in its feel. It is a neutral, grayed down, bluey-green color (how is that for a professional description?) that reminds me of muted sea glass.  Ceiling color is always a little darker because of the shadows - so if that looks too intense you can go to Spare White - 1 up on the strip.
